BANANA PUDDING | |
2/3 c. sugar 1 (12 oz.) can Pet milk, add enough water to make 3 c. mix (water-milk) 4 tbsp. cornstarch 1/2 tsp. salt 1 tbsp. flour 1 tsp. vanilla 3 lg. eggs or 4 sm. ones separated (save whites for meringue) Mix sugar, cornstarch, flour, and salt, then add 3 cups milk mix and cook on low heat until thickened. Add beaten eggs and cook until blended smooth and thickened. Put in pan of cold water and stir until cool. Layer 9 x 13 inch pan with bananas, vanilla wafers, and sauce. Top with meringue. MERINGUE: Whites of 3 eggs 1/2 c. sugar Dash of cream of tartar Beat egg whites until frothy. Gradually add sugar and cream of tartar and continue beating until meringue holds a peak. Spread evenly over pudding mixture. |
