GREEK LOUKOUMATIS | |
1 cake yeast 3 lbs. enriched flour (approx. 12 c.) 1/4 c. shortening 2 tsp. double action baking powder 1 tbsp. salt 3 c. milk 1 c. orange juice 1/2 lemon, juice 4 eggs Oil for frying Crumble yeast in small amount of lukewarm water. Add 1 teaspoon sugar. Weigh flour. Add salt and baking powder. Sift. Work in shortening, using fingers. Heat milk to scalding point. Cool to lukewarm. Add orange juice, lemon juice and lightly beaten eggs. Add bubbling yeast. Pour this mixture into depression in flour. Beat well for at least 5 minutes. Cover and let rise until soft dough is light. Dip spoon in oil, then in soft dough. Drop dough by spoonfuls into deep fat in frying kettle. Temperature of fat is about 375 degrees. Cook until balls are golden brown. Remove from fire. Drain. Pour honey or syrup over balls. Dust with cinnamon. |
