SWEET AND SOUR FISH 
2 lbs. fish
1 c. water
4 slices ginger
1/2 c. vinegar
1/4 c. shredded peppers
1/4 c. sliced carrots
1/4 c. pineapple chunks
4 tbsp. sugar
1 tsp. soy sauce
2 tsp. cornstarch
4 tbsp. water
Oil

Combine ginger, vinegar, peppers, carrots, sugar, and soy sauce; cook for about 5 minutes. Add pineapple and cook 3 more minutes. Add cornstarch and cook about 2 minutes. Slash fish and rub with salt. Deep fry in oil until done. Pour sauce over fish and serve. (Sauce delicious on baked fish as fat free alternative.)
