MINT CHIPPERS 
1 c. butter
2 c. sugar
2 eggs
2 tsp. vanilla
3 c. flour
2 tsp. baking powder
1 tsp. salt
Green food coloring
2 c. uncooked oats
2 c. chocolate chips
1 c. coconut
1/2 c. milk
1/2 tsp. mint extract

Beat together butter and sugar until light and fluffy. Stir in egg and vanilla. Gradually add flour, baking powder and salt; mix well. Blend in green food coloring to desired color. Stir in oats, chocolate chips, coconut, milk and mint extract. Drop by rounded teaspoon onto lightly greased cookie sheets. Bake in preheated oven at 375 degrees for 10 to 12 minutes. Makes about 4 dozen.
