BAKED APPLE DOUGHNUTS 
4 1/2 c. sifted flour
5 1/4 tsp. baking powder
1 1/2 tsp. salt
1 1/2 tsp. nutmeg
1 1/2 c. sugar
1 c. shortening
3 beaten eggs
3/4 c. milk
1 1/2 c. grated apple

Sift together baking powder, salt, nutmeg, flour, and sugar. Cut in shortening until mixture is fine. Mix together egg, milk, and apple. Add at once to dry ingredients, mix thoroughly but quickly.

Fill greased muffin pans 2/3 full. Bake at 350 degrees 20-25 minutes or until golden brown. Remove from pans. Immediately roll doughnuts in the following: 1/3 c. sugar, 1 tsp. ground cinnamon.

This was the best baked donut recipe I have ever made. The only change I made was, instead of shortening, I melted salt free butter and added it to the dry ingredients, along with the eggs, apples and milk. I didn't cut the butter into it as recommended. I just mixed the dry ingredients together, then added the wet to it, including the melted butter and mixed. They are the first baked donuts that actually had the consistancy of donuts. I will definitely make these again.....and again!

This recipe is a smidge misleading. Let's be honest here. Is there anything really you can make in a muffin pan that turns out to be a doughnut? These are quite clearly muffins.
