CHOCOLATE DIP COOKIES 
Ritz crackers
Peanut butter
Melted chocolate

Spread peanut butter between Ritz crackers. With tongs, dip in melted chocolate.

When I make these, I melt the chocolate in the microwave using a microwave safe utensil (2 or 3 squares of chocolate at a time). Then, I put each cookie in the chocolate and use an ice tea spoon to quickly flip each one, making sure it is covered all over - it is easy to lift the cookie out and lay it on the wax paper lined pan (such as a jelly roll pan). I have found these cookies freeze well, too - so, you can make them ahead, freeze and store them. Then, when you want them, just remove from freezer. I am so thankful a friend gave me this recipe several years ago. It is one of my family's favorites.
