4 c. mashed sweet potatoes 1/2 c. sugar 2 eggs 1 tsp. vanilla 1/2 c. melted butter Mix the ingredients thoroughly. Pour into a buttered casserole dish. Topping: 3/4 c. brown sugar 1/4 c. flour 1 c. chopped pecans 1/4 c. butter Mix ingredients to crumb consistency; sprinkle on top of the potatoes. Bake at 350°F for 30 minutes or until brown. |
