PUMPKIN CHEESECAKE 
1 c. graham cracker crumbs
3/4 c plus 1 tbsp. sugar
6 tbsp. butter, melted
1 (16 oz.) cream cheese, room temperature
1 (16 oz.) can pumpkin
1 tsp. cinnamon
1/4 tsp. nutmeg and ginger
2 eggs
1 (9 oz.) cool whip
Sliced almonds (optional)

Mix crumbs with 1 tablespoon sugar and melted butter until blended. Press into bottom of 8 or 9 inch pie pan. Chill. Beat cream cheese and 3/4 cup sugar and spices. Add eggs one at a time, beating well after each. Pour into crust and bake in preheated oven at 350 degrees for 50 minutes. Cook completely before topping with cook whip. Arrange sliced almonds on top.
