PRALINE CHEX MIX (HOLIDAY MIX)
I have been making this Praline Mix for about 10 years. Every Christmas I put it in containers and give as gifts. This year I have made 43 containers! It takes about 25 boxes of Chex Mix and large bags of pecans and almonds.

This has become a family tradition and everyone returns my containers for refills for the next Christmas. It has been a lot of fun!

8 cups Rice Chex cereal
2 cups nuts (I use a mix of pecans and almonds)
4 tbsp. (1/2 stick) butter
1/2 cup packed brown sugar
1/2 cup white corn syrup
1 tsp. vanilla
1/2 tsp. baking soda

Preheat oven to 250°F. Mix cereal and nuts in a 13x9-inch pan.

Combine butter, brown sugar and corn syrup in a 4 cup microwaveable measuring cup. Microwave for 1 1/2 minutes then stir to mix together and then microwave for another 1 1/2 minutes to a rolling boil.

Remove from microwave and immediately mix in vanilla and baking soda. Stir until real frothy and pour over the cereal nut mix. Stir to coat all of the cereal nut mix.

Place in a slow (250°F) oven and bake for 1 hour, stirring every 20 minutes.

When done baking pour out on a cookie sheet with 1-inch sides and let cool. When cool break up into small pieces and transfer to a sealed container.

Since microwave ovens vary in power, you may need to adjust your cooking time.
