QUICHE LORRAINE 
2 (9-inch) frozen pie shells (thawed)
8 strips bacon
1 lg. onion, thinly sliced, then cut in half
2 c. Swiss cheese, cubed
1/3 c. Cheddar cheese, grated
4 eggs
2 c. cream
1/4 tsp. nutmeg
1/2 tsp. salt
1/4 tsp. white pepper

Preheat oven to 450 degrees. Brown pie shells 3-5 minutes. Cook bacon until crisp. Save 1 tablespoon of fat and saute onion until transparent.

Line pie shells with crumbled bacon, then add onion. Fill with Swiss cheese, then add Cheddar cheese. Beat eggs, cream, and seasonings. Pour over cheese mixture. Bake 15 minutes. Reduce oven to 350 degrees and bake 10-15 minutes longer. Serves 6.
