SPINACH SALAD WITH POPPY SEED
DRESSING
 
Fresh spinach leaves
Hard boiled eggs
Bacon, fried and crumbled
Chopped onion
Sliced fresh mushrooms

DRESSING:

2 c. sugar
2 tsp. dry mustard
3 1/2 tsp. salt
1/2 c. finely chopped onion
1 1/4 c. vinegar
2 1/3 c. salad oil
3 tsp. poppy seeds

Combine all ingredients for dressing in blender and blend. Pour into a container and refrigerate. Keeps well. Makes about 1 quart. Delicious over Spinach Salad!
