COFFEE CAKE WITH STREUSEL
FILLING
 
1/2 c. milk
1 egg
1 tsp. vanilla
1 1/2 c. flour
3 tsp. baking powder
1/4 tsp. salt
3/4 c. sugar
1/4 c. shortening

Sift flour once before measuring. Sift flour, baking powder, salt and sugar together. Cut in shortening and mix until mixture is like fine corn meal. Blend in WELL BEATEN egg, mixed with milk. Then blend in vanilla, and beat just enough to mix well. Pour half the batter into a well greased and floured baking pan (6 x 10 inches or 8 inch square). Sprinkle with half the streusel mixture. Add remaining batter and sprinkle remaining streusel mixture over top. Bake 25- 30 minutes at 375 degrees.

STREUSEL MIXTURE:

1/2 c. brown sugar
2 tbsp. flour
2 tsp. cinnamon
2 tbsp. melted butter
1/2 c. chopped nuts

Mix sugar, flour and cinnamon together. Then blend in good with brown sugar and 1/2 cup chopped nuts, pour 1/4 cup melted butter over all and sprinkle with cinnamon. Bake at 350 degrees for 50 minutes.
