RICE AND PEAS 
4 c. white rice
1 pkg. red kidney peas
Salt or Mrs. Dash
Pepper
3 sprigs thyme
2 Escallions
Garlic powder
Onion powder
Coconut milk

1. Soak 1/2 peas overnight.

2. Cook peas for about 30 minutes until slightly tender.

3. Add coconut; mix, bring to boil.

4. Add seasonings: dash of salt, dash of pepper, 3 sprigs of thyme, escallion and onion and garlic powder.

5. Allow to cook for about 20 minutes.

6. Add rice, reduce heat to medium.

7. Follow directions for cooking rice.

8. Upon completion, rice should be brown, peas tender and mmm so tasty! Serves 6 to 8.
