PEAS WITH RICE 
4 scallions, chopped
4 tbsp. butter
2 c. peas, frozen or fresh
4 c. chicken broth
1 c. rice
2 tbsp. parsley
1/2 c. Parmesan cheese

Chop onions, white and green. Saute in butter. Add peas, cook 1-2 minutes. Add broth. Bring to a boil. Add rice and parsley. Simmer 15 minutes. Stir in cheese. Serves 4.
