APPLE PIE 
3 c. Jonathan apples, sliced
1 tsp. lemon juice
1 c. sugar, divided into thirds
2 tbsp. all-purpose flour
1/2 tsp. cinnamon
5 or 6 thin slices of butter
8 inch unbaked pie shell

Peel, core, and slice apples and sprinkle with lemon juice. Stir together 1/3 cup sugar, 1 tablespoon flour, and cinnamon. Sprinkle over apples. Stir together another 1/3 cup sugar and 1 tablespoon flour and sprinkle over bottom of unbaked 8 inch pastry in pie pan. Arrange apples on top. Sprinkle last 1/3 cup sugar on top of apples and dot with butter. Arrange top crust. Prick top to allow steam to escape. Bake in preheated oven at 400 degrees for 15 minutes. Reduce heat to 350 degrees and continue baking until apples are tender and juice bubbles up, about 45 minutes. Cool pie before serving.
