FISH BAKED IN CASSEROLE 
1 1/2 lbs. fish
1/4 c. butter
1 tbsp. parsley
1 c. sour cream
1 1/2 c. Parmesan cheese
1/2 c. or more Ritz crackers, crushed
2 tbsp. melted butter

Melt butter. Add parsley and let cool. Add sour cream and Parmesan cheese and spread over fish. Mix crackers and cheese together. Sprinkle crumb mixture over the fish. Bake at 350 degrees for 20 to 25 minutes.
