LEMON CHESS PIE | |
9" unbaked pie shell 1/2 c. butter, softened 2 c. sugar 4 eggs 1/3 c. lemon juice 1 1/2 tbsp. flour 1/8 - 1/4 tsp. grated lemon peel (opt.) Cream butter and sugar together until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in lemon juice, flour and lemon peel, blending well. Pour into unbaked pie shell. Bake in lower third of oven at 350 degrees for 35 minutes or until silver knife inserted in center comes out clean. Serves 6 to 8. |
