SWEET POTATO PIE 
1 partially prepared pie shell, lg.
2 tbsp. butter
2 c. mashed sweet potatoes
1/2 c. sugar
1 1/2 c. cream
1/4 c. walnuts, chopped
1/3 c. apricot or peach preserves
1/2 tsp. salt
3/4 tsp. cinnamon
1/2 tsp. ground ginger
1/2 tsp. ground nutmeg
1/8 tsp. ground cloves

Heat oven to 350 degrees. Separate 1 egg. Beat white with 1 tablespoon water and brush over partially baked pie shell. Melt butter. Beat yolk with remaining eggs. Add sweet potatoes. Beat in sugar, cream, butter, walnuts, preserves, salt, cinnamon, ginger, nutmeg and cloves. Pour into pie shell and bake until knife stuck in the filling comes out clean, 40 to 50 minutes.
