SHORTBREAD 
1 1/4 c. flour
3 tbsp. cornstarch
1/4 c. sugar
1 stick firm butter, cut into pieces
1/2 tsp. vanilla

Mix dry ingredients together. Rub butter in, bit by bit, until there are no more big particles (by hand). Gather in a ball. Press into 9-inch springform pan. Use a fork to make pattern on edges and across top (like pie crust). Sprinkle 1 tablespoon sugar on top.

Bake at 325 degrees for 40 minutes or until pale golden brown. Remove from oven while hot. Cut while it's hot, into 8-12 wedges. (Susan loosened the springform pan before cutting.)
