FRESH APPLE CAKE | |
3 eggs 1 c. sugar 1 tsp. cinnamon 3 c. tart cooking apples, peeled, cored and diced 1/2 c. raisins 1 c. vegetable oil 2 c. self-rising flour 1/2 tsp. nutmeg 1/2 c. chopped walnuts (optional) Heat oven to 350 degrees. In a large bowl beat together eggs, oil and sugar with electric mixer until smooth. Sift flour and spices together reserving 1 teaspoon for later use. Gradually add dry ingredients to liquid, continue mixing until well blended and smooth. Toss apples, raisins and walnuts with remaining flour mixture and fold into batter. Lightly grease a Bundt pan and dust with flour. Pour in cake batter. Bake 50 to 55 minutes or until a cake tester comes out clean. Let cool completely before removing from pan and serving. |
