RHUBARB ZUCCHINI PIE 
3 c. zucchini, diced
1 c. rhubarb, sliced
1 1/4 c. sugar
1 1/2 tsp. apple pie spice
Pinch salt
1/4 c. flour
1/4 c. thawed apple juice concentrate
2 eggs, beaten
Pastry for 2 crusts
Sugar for sprinkling

Combine all ingredients except for pastry and pour into unbaked 9" pie shell. Cover with top crust and cut slits for steam to escape. Sprinkle lightly with sugar and bake at 400 degrees for 20 minutes, reduce heat to 350 degrees until golden brown and done.
