SWEET POTATO OR YAM CASSEROLE 
3 1/2 lbs. yams, cooked in boiling, salted water
1/2 c. butter, at room temperature
1 c. granulated sugar
13 oz. can evaporated milk
6 eggs
1/2 tsp. vanilla
1 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
20 oz. can crushed pineapple
1 c. raisins
1 1/2 c. miniature marshmallows

Grease 3/4 quart oblong baking dish. Break up yams into large bowl, add butter, sugar, milk, eggs, and spices. Beat on low and then high until fluffy. Gently stir in pineapple and raisins and bake in dish. Top with marshmallows. Beat at 375 degrees for 20 minutes, then 350 degrees for 40 minutes. Let stand 20 minutes in warm room.
