SALMON CROQUETTES | |
3/4 c. corn or vegetable oil 1 (15 1/2 oz.) can pink salmon 1 egg 1/8 tsp. pepper 1 med. onion 1/2 to 3/4 c. very fine bread crumbs Heat oil in large fry pan. Empty salmon and liquid into medium size mixing bowl. Remove bones and break salmon up into very small flaky pieces. Mix in egg and pepper. Grate in onion. Add bread crumbs slowly, mixing continuously, until consistency is pasty. Form patties and fry in oil until golden brown, turning patties, until browned evenly on both sides. Drain on brown paper bag. Yields about 8 or 9 croquettes. |
