BEEF WITH BROCCOLI | |
1 1/2 lb. flank steak, round steak or any other steak; thinly sliced into about 1/2 x 1/2 x 2 inch long 1 bunch fresh broccoli 1 tbsp. cooking wine 3 slices ginger, cut into thin, small pieces 4 green onion 1 tsp. salt 1/4 tsp. pepper 2 tbsp. cornstarch (one tbsp for marinate, one for gravy) 3 tbsp. Soy Sauce 2 tbsp. broth or water 1/2 tsp. sugar 4 tbsp. peanut oil, crisco oil or any other vegetable oil Put beef slices and add soy sauce, cornstarch, salt, pepper, wine, broth, ginger, sugar, onions into a big bowl until smooth. Set aside for 20 minutes at least (they can be marinated up to 24 hours. Sealed and covered in refrigerator). Wash and clean broccoli (take off the old ends, leaves and skins) and prepare them to bite size. 1. Heat 2 Tbsp. oil with high heat and add beef with its marinade. Stir fast a few minutes and take out from wok. Set aside. 2. Heat another 2 Tbsp. oil with medium heat and add fresh broccoli until it is all mixed. Then add 1/2 tsp. salt, if necessary, and broth or water and cook for 3 minutes. 3. Add beef just to heat through. 4. Take out immediately and serve over hot rice for six people. You can also use green pepper 3-4 or tomatoes with beef the same except much less time on vegetables in cooking. The same way for green pepper and make pepper steak. You can also use chicken or pork (cook longer than beef) match with different vegetables to make a lot of dishes. |
