DORIS' ROLLS
1 pkg. dry yeast
1/4 c. warm water
1/2 tsp. sugar
1 c. milk, scalded
1/4 c. sugar
1/4 c. butter
1 tsp. salt
1 egg, beaten
4 c. sifted flour, approx.

Soften yeast in warm water and add sugar. Let set. Scald milk, add butter, sugar and salt. (I usually put the butter in the milk as I scald it to start the butter to melt.) Stir in softened yeast. Stir in flour until not sticky.

Knead at least 5 to 10 minutes on floured board. Put in greased bowl with light covering of grease on top. Cover and let rise in warm place until doubled in size. Punch down and make into rolls. Let rise again. Bake at 350 degrees about 20 minutes or golden brown. Makes 2 dozen rolls.

For cinnamon rolls, roll out and cover with butter, sugar and cinnamon. Roll up and cut in 1 inch pieces. Place brown sugar and butter in bottom of pan. Place cut side down on top of this mixture. Bake as above.
