Hot Fudge Pudding Cake / CM

HOT FUDGE PUDDING CAKE 
1 cup all-purpose flour
3/4 cup sugar
2 tbsp. cocoa
2 tsp. baking powder
1/4 tsp. salt
1/2 cup milk
2 tbsp. shortening, melted*
1 cup finely chopped nuts (optional)
1 cup brown sugar, packed
1/4 cup cocoa
1 3/4 cups hot water

Preheat oven to 350°F.

In a mixing bowl, measure flour, sugar, 2 tbsp. cocoa (or use up to 4 tbsp.), baking powder and salt. Blend in milk and shortening; stir in nuts.

Pour into an ungreased 9x9x2-inch square baking pan.

Stir together brown sugar and 1/4 cup cocoa; sprinkle over batter. Pour hot water over the batter. Do not stir!

Bake for 30-45 minutes or until a toothpick inserted in center of cake (not the pudding) comes out clean.

While the cake is still very warm from the oven, spoon cake and pudding into dessert cups or serving bowls. Top with Cool Whip, whipped cream flavored with rum or vanilla ice cream, or garnished with chocolate curls, if desired, or serve as-is.

*If using salted butter, decrease salt by half.

I made this a couple of days ago for a dessert for my mother and my boyfriend. I was a bit nervous because of just pouring the water on top on the batter and then shoving it in the oven. But that was also the fun part. It turned out great and we topped it off with some caramel ice cream. It was wonderful. Then the next day we used the cake for the chocolate part of a Smore. It's delicious!!

I used to make this recipe, but I poured strong coffee instead of water over the top. It was usually leftover morning coffee. Yummy!

Use strong coffee instead of water. Go all the way and use 4 tbsp. of cocoa and a handful of chocolate chips in the batter.

Shortening=butter or any other kind of "shortening" such as oil, Crisco, etc. When a recipe specifies only shortening, the choice of what kind of shortening is up to you.

Thank you for your help. I had to make this cake. I was thinking that the recipe sounded kind of strange because there was no eggs. I have to say, it was great! It came out like a brownie with this fantastic chocolate sauce running through it. Big thumbs up!

The cake forms a pudding-like sauce itself. You don't need to add packaged pudding.

This is an old WW11 recipe originally, when all "luxuries" were devoted to the was effort. Yes, it is exceptionally good but I always double the water/cocoa mix over top because I like lots of sauce; mind you, I double the recipe to begin with and use a 13" x 9" pan. My grandmother's recipe.
