PUMPKIN YEAST BREAD 
1/2 c. cooked pumpkin
1 egg
3 tbsp. butter
3 tbsp. honey
1 c. hot water
1/3 c. sugar
2 c. whole wheat flour
3 c. unbleached flour
2 tsp. salt
1 pkg. dry yeast

Blend egg, pumpkin; add butter and honey to hot water. Slowly add water mixture to pumpkin, mix well. In a large bowl combine all dry ingredients except 2 cups flour. Add pumpkin mix and stir. Add as much flour as needed to make a stiff ball. Knead on floured board, adding remaining flour until dough becomes elastic.

In a greased bowl, put dough and cover with damp cloth. Let rise until doubled. Punch down, form into 2 loaves (round or loaf) and place in greased pans. Brush tops with milk. Let rise until doubled. Bake at 375 degrees of 25 minutes. Cool on racks. Makes 2 medium loaves.
