PECAN OR CHOCOLATE CHIP COOKIES 
3 c. sifted flour
1 tsp. baking soda
1/2 tsp. salt
2 c. sugar
1 c. shortening
2 eggs
2 tbsp. vanilla

Mix shortening until soft. Slowly add sugar until creamy and light. Add eggs, one at a time. Add vanilla. Beat at high speed until well blended. Add flour, a little at a time, mix each addition thoroughly. Add 1 cup chopped nuts or chocolate chips; mix well.

Turn cookie dough onto a large piece of waxed paper. Shape with help of paper into a roll about 2" in diameter. Wrap tightly in waxed paper and store in refrigerator overnight or as long as desired. Slice and bake.
