OLD FASHIONED SUGAR COOKIES | |
1 stick each unsalted butter and butter, softened 1/2 c. confectioners sugar 1/2 c. granulated sugar 1 large egg 1 1/2 tsp. vanilla extract 1 tsp. baking powder 1/2 tsp. salt 2 1/2 c. all-purpose flour 1 c. coarse white or colored sugar, or a combination Heat oven to 375°F. Coat baking sheets with nonstick spray. In a large bowl, beat butter, butter, confectioners and granulated sugar with mixer on low speed until blended. Increase to high until fluffy and light. Beat in egg, vanilla, baking powder and salt. On low, blend in flour. Roll dough into 1 inch balls. Roll balls in coarse sugar. Place about 2 inches apart on baking sheet. Flatten balls with the bottom of a glass or bottle into 2 inch rounds. Bake 10 minutes or until golden brown. Cool on baking sheets for 10 seconds or so before removing cookies to wire racks to cool completely. |
