CHICKEN CASSEROLE 
1 whole chicken (3 lbs.), boiled, deboned, chopped
1 c. broth
1 can mushroom soup, undiluted
1 c. mayonnaise
2 c. cooked rice
1 c. water chestnuts, drained & sliced thin
1 med. onion, chopped or 1 tbsp. onion powder

Mix ingredients, pour into large casserole. Add topping just before baking.

TOPPING:

1 stick butter, melted
1 sleeve Ritz crackers, crushed

Pour melted butter over mixture and then sprinkle crushed crackers over butter. Bake at 350 degrees for 30 minutes.
