MY FRIEND'S FABULOUS CHICKEN
CASSEROLE
 
5-6 boneless chicken breasts
2 cans cream of chicken soup
2 sleeves Ritz crackers
2 c. sour cream
2 c. rice (or 2 boiling bags), cooked
2 sticks butter

Boil chicken about 30 minutes (until done) and separate into bite-sized pieces. Mix together sour cream, soup and rice, then add chicken and mix well. Season with salt and pepper to taste. Place mixture in large casserole dish. Crush Ritz crackers and combine with melted butter. Top casserole with Ritz mixture. Bake at 350 degrees about 30 minutes.
