BROCCOLI AND CHEESE CASSEROLE 
1 small onion, chopped
1 tbsp. water
1 (10 oz.) pkg. frozen chopped broccoli
1 ( 7 oz.) pkg. long grain and wild rice with mushrooms mix
1 tbsp. corn oil butter
1/4 tsp. salt
2 tbsp. flour
1 c. evaporated skim milk
3 oz. American cheese, shredded

Cook onion in water in skillet until transparent, set aside. Microwave broccoli following package directions for 6 minutes; drain. Prepare rice following package directions omitting 2 teaspoons butter. Melt butter in a large saucepan; remove from heat. Add salt and flour, stirring until smooth. Add milk gradually, stirring until well blended. Return to heat and bring to a boil, stirring constantly. Boil for 1 minute, stirring constantly. Stir in cheese and cook until cheese melts, stirring constantly. Add onions, broccoli and rice; mix well. Spray a 1 1/2 qt. baking dish with non-stick cooking spray. Pour broccoli mixture into baking dish.

Bake at 350°F for 30 minutes.

Makes 8 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
