SQUASH - MEAT CASSEROLE 
2 sm. Summer squash, cut up & cooked
1 carrot, grated
1 sm. chopped onion
1 sm. jar pimientos, drained
1 can cream of chicken soup
1 (8 oz.) carton sour cream
3/4 stick butter (use 1 stick if double recipe), melted
1/2 pkg. Pepperidge Farm Herb dressing mix (for bottom)
1/2 pkg. Pepperidge Farm Herb dressing mix (for top)
Use your leftover, cooked turkey, chicken or ham

Cover bottom of large casserole dish with dressing mix. Pour melted butter over top of mix. Mix remaining ingredients in a bowl and pour over dressing mix. Sprinkle additional dressing mix to cover top of casserole. Bake 25-30 minutes at 325 degree oven or until bubbly.

Serves 6.
