CREAM CHEESE CAKE IN GRAHAM
CRACKER CRUST
 
3 (3 oz.) pkgs. cream cheese
2 tbsp. butter
1 c. sugar
1 egg
2 tbsp. flour
2/3 c. milk
1/4 c. lemon juice
2 tbsp. lemon rind

Cream cheese and butter; add sugar and egg and mix well. Add flour and milk. Stir in lemon juice and lemon rind. Pour mixture in unbaked crust and bake at 350 degrees for 35 minutes. Chill until set.

GRAHAM CRACKER CRUST:

1 1/4 c. graham cracker crumbs (15 square crackers = 1 c.)
3 tbsp. sugar
1/3 c. butter
Cinnamon & nutmeg

Mix crumbs and sugar. Add melted butter until thoroughly blended. Pack mixture into lightly greased pan. Press firmly. Bake at 350 degrees for 8 minutes. Cool and fill. Crush may be chilled for 1 hour before filling if you do not wish to bake it.
