SWEET AND SOUR GREEN BEANS 
1 1/2 lbs. fresh green beans
1 qt. water
Salt to taste
4 slices bacon
2 med. onions, thinly sliced
1 tbsp. dry mustard
1 tsp. salt
2 tbsp. brown sugar
2 tbsp. sugar
1/4 c. vinegar

Remove strings from beans; cut beans into 1 1/2 inch pieces. Wash thoroughly. Place water, salt, and beans in a medium saucepan, and bring to a boil. Reduce heat; cover and simmer 10 to 15 minutes or until beans are crisp and tender. Drain beans, reserving 1 cup liquid; set aside.

Cook bacon in a large skillet until crisp; remove bacon, reserving drippings in skillet. Crumble bacon, and set aside. Saute onion in bacon drippings until tender; gradually stir in mustard.

Combine 1 teaspoon salt, sugar, reserved bean liquid and vinegar; pour over onion. Bring to a boil, stirring to blend well. Add beans and bacon; cover and simmer 15 minutes.
