FRESH SALSA 
6 to 8 tomatoes
1 sm. yellow onion
1/4 c. chopped fresh cilentro
1 (4 oz.) can ortega chilies, diced green
1 (4 oz.) can diced Jalapeno
Juice from 1 lemon
1 tsp. salt

Chop tomatoes and onion and combine with all other ingredients. Simmer for 5 minutes, then let cool. Makes approximately 2 quarts. Can be frozen, less or no Jalapenos can be added according to taste. A large can of tomatoes can be substitued, but fresh is best.
