SPANISH RICE 
12 oz. ground turkey
Med. onion, chopped
2 (16 oz.) cans tomatoes
1 tbsp. hot sauce (or to taste)
2 c. cooked brown rice
2 or more stalks celery, chopped
Sm. can mushrooms
Weight Watchers chicken or beef flavored broth mix, 1 packet

Brown turkey and weigh out 12 ounce brown onions and celery. Mix vegetables and meat in an 8 x 12 inch pan.

Drain canned tomatoes, add fluid to frying pan to pick up drippings from turkey and vegetables. Stir in broth flavoring. Add this mixture to meat and vegetables. Chop canned tomatoes.

Mix tomatoes and rice with meat mixture. Salt and pepper. Cook at 375 degrees for 1 hour. Makes 4 servings. 1 serving - 3 ounces protein, 1 bread, plenty of vegetables plus 10 calories.

NOTE: For a drier version use only one can of tomato fluid to mixture.
