FETTUCINI WITH SMOKED TURKEY AND
BLACK PEPPERCORNS
 
1 tsp. unsalted butter
1 tsp. minced shallots
1/4 c. dry white wine
3/4 c. heavy cream
1/8 tsp. ground nutmeg
Fresh Parmesan cheese to taste
4 oz. fettucini
4 oz. smoked turkey in julienne strips
1 tbsp. fresh chopped chives
1 tsp. crushed peppercorns, crushed in plastic bag with rolling pin
Salt

Melt butter in heavy skillet over medium heat. Saute shallots and pepper 30 seconds. Add wine; boil until almost no liquid, approximately 4 minutes. Add cream, nutmeg, chives, salt; boil 5 minutes, stirring until becomes sauce. Cook pasta al dente. Put in warm bowl, add sauce, turkey, toss. Add cheese to taste.
