SWEET POTATO CASSEROLE 
1 lb. can whole sweet potatoes, drained
1/2 c. brown sugar
1 tbsp. cornstarch
1/4 tsp. salt
1 c. orange juice
1/4 c. light raisins
2 tbsp. dry sherry
1/2 tsp. shredded orange peel
Walnut halves

Arrange potatoes in buttered casserole. In saucepan combine brown sugar, cornstarch and salt. Blend in juice and raisins. Cook and stir over high heat until boiling. Add sherry and orange peel. Pour over potatoes. If desired, sprinkle some walnut halves on top. Bake uncovered 350 degrees about 25 minutes.
