CHOCOLATE MARSHMALLOW BROWNIES 
1/3 c. butter
1/3 c. cocoa
2 c. sugar
4 eggs
1 1/2 c. flour
1 tsp. baking powder
1/4 tsp. salt
2 tsp. vanilla
1 pkg. marshmallows

Preheat oven to 350 degrees. Line a 9 x 13 inch pan with waxed paper, leaving about an inch extending above edge of pan on each long side. Spray sides of lined pan with Pam.

Melt butter and add cocoa.

OR - Place 4 ounces baking chocolate in a bowl and microwave on high for 2:15 minutes. Add 1 stick of butter cut in pieces and microwave on power 3 for about 4 minutes or until butter melts.

Add sugar. Beat in eggs. Add flour, baking soda, salt and vanilla. Mix well. Pour into pan and bake for 25 minutes.

While the brownies are baking, cut marshmallows in half horizontally.

At the end of the 25 minutes, take the brownies out and cover the top of the hot cake with a layer of the marshmallow halves. Return to the oven for 5 minutes or until marshmallows are puffy. Don't let marshmallows start to brown!

FROSTING:

1/8 lb. softened butter
1/3 c. cocoa
1/3 c. milk
1 box 10X sugar (3 1/2 c.)
1 tsp. vanilla
1/8 tsp. salt

Combine all ingredients and beat until smooth. Spread over marshmallows.

To use a food processor for frosting (keeps sugar contained) : Cut butter into pieces and let it soften in processor. Add other ingredients, cover and process.

DON'T TRY TO CUT UNTIL NEXT DAY!

Loosen ends of cake with a spatula and use overhanging waxed paper to remove from pan to cutting board. Peel off waxed paper and cut into squares.

Since microwave ovens vary in power, you may need to adjust your cooking time.
