CHOCOLATE COVERED CHERRIES 
1 1/4 c. flour
2/3 c. brown sugar
1 tbsp. water
1 c. semi-sweet chocolate chips
Maraschino cherries
1/2 tsp. baking soda
6 tbsp. butter
1 egg

In a medium saucepan, heat and stir brown sugar, butter and water over low heat until butter is melted. Add chocolate chips. Heat and stir until chocolate is melted. Pour into a large mixing bowl and let stand 10 to 15 minutes or until cool. Beat egg into chocolate mixture. Stir in the flour and baking soda until well mixed. Cover and chill for 1 to 2 hours or until easy to handle. Scoop cookies (using a size 40 scoop) onto ungreased cookie sheets. Place 2 inches apart. Top each with a whole cherry. Bake at 350 degrees for 10 minutes. Remove and cool until mints are firm. Makes about 48.
