STUFFED PEPPERS 
4 green peppers
2/3 c. precooked rice
1/4 c. olive oil
1 lb. ground beef
2 tbsp. minced onion
1 tbsp. minced parsley
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 c. tomatoes, sieved
1/4 c. water
1/4 c. minced celery
1 tbsp. olive oil
1/2 tsp. salt
1/4 tsp. pepper
Mozzarella cheese

Rinse peppers and cut top off. Remove white fibers and seeds. Rinse cavities. Drop in boiling salted water to cover and simmer 5 minutes. Remove from water, invert; drain. Cook rice.

Heat oil in skillet, add beef and brown. Stir in onion, parsley, salt and pepper. Add rice. Fill peppers with mixture. Place on baking dish. Mix tomatoes, water, celery, oil, salt and pepper; pour around peppers. Place cheese on each pepper. Bake at 350 degrees for 15 minutes in 2 quart dish.
