CHICKEN SALAD 
2 c. (1 lb.) diced, cooked chicken
2 c. (10 oz.) finely diced celery
2 tbsp. sweet cucumber relish
2 coarsely chopped hard boiled eggs (opt.)
1 tsp. finely diced onion (opt.)
2 tbsp. mayonnaise
2 tbsp. salad cream (or use all mayonnaise)
Lettuce, to serve

Mix together the chicken, celery, relish and chopped egg and onion if you choose. Lightly stir in the mayonnaise and salad cream, if used. Add more of these if you want but only enough to make a smooth salad.

To serve, spoon onto a bed of lettuce or eat between two slices of toast.
