LEMON BAR
 
To 1/4 pound of butter (room temperature), add:

1 cup all-purpose flour, sifted with 1/2 cup powdered sugar.

Mix until you have a ball of dough. Pat into an 8x8 inch square cake pan. Bake for 15 minutes at 350 degrees.

Prepare topping as follows, while cookie base is baking:

Whip: 2 eggs, 1 cup of granulated sugar, sifted with 2 tablespoons flour and 1/2 teaspoon baking powder. Add rind and juice of one lemon.

Pour on baked cookie base and bake at 350 degrees for 25 minutes.

Cool thoroughly, sprinkle with powdered sugar and cut into bars of desired size.

Note: This recipe may be doubled and baked in a 9x13x2 pan. Bake this quantity at 350 degrees for 30 minutes.
