CHICKEN AND ORANGE RICE
CASSEROLE
 
1 whole chicken in parts or 6 to 8 pieces
1 small jar dried beef
3/4 c. uncooked rice
1/2 tsp. salt
1/2 tsp. pepper
1/2 c. sour cream (optional)
1 small can mushrooms (optional)

Grease 9 x 18 casserole dish/pan or spray with Pam. Line container with dried beef. Pour uncooked rice evenly on top of beef. Add salt, pepper, mushrooms, onions and orange juice. Mix well into rice. Add sour cream if desired. Place chicken evenly over top of mixture and place remaining dried beef on top of chicken. Pour 1/2 cup orange juice on top of chicken mixture. Place aluminum foil over dish.

Bake for 2 1/2 hours at 300°F or bake for 1 1/4 hours at 375°F. Sour cream, mushrooms and dried beef are all optional.
