HOMINY GRITS - CHEESE SOUFFLE 
4 c. water
1 c. quick cooking hominy grits
1 tsp. salt

Cook according to directions on box. Cool for 1 hour. Beat 3 egg yolks (one at a time) into Hominy mixture, then set aside.

In a saucepan melt 3 tablespoons butter. Add 3 tablespoons flour. Blend and add 1 1/2 cups milk. Cook until thick and add 1/2 cup grated sharp cheese. Fold in stiffly beaten egg whites. Garlic powder and red pepper may be added to this mixture if desired. Put 1/2 cup grated cheese on top. Bake at 350 degrees for 45 minutes. This recipe fills a 9 x 13 inch pyrex baking dish.
