MY DAD'S CHILI | |
2 lbs. ground beef 1/2 c. chili powder 1/4 c. paprika 1 sleeve saltine crackers, finely crushed (cracker meal) Salt to taste Cook ground beef until well done; stirring often to keep beef from being too lumpy. Drain off fat. Add chili powder and paprika to cooked beef and continue to cook on medium heat until spices are cooked into meat. Then add enough cold water to meat to make a good size pot of chili. To the meat and water, add the cracker meal, stirring until dissolved. Cook over medium heat, stirring frequently until chili is thick and boiling. Add salt to taste. Reduce heat to simmer and cook about 15 to 20 more minutes. This is a thick, spicy chili really good for chili dogs. If you like beans in your chili, add 2 cans chili beans or red kidney beans right after you add the water and follow the recipe as written. |
