SUGAR COOKIES (ROLL OUT) 
3 1/4 c. all-purpose flour
1 1/2 c. sugar
2/3 c. shortening
2 eggs
2 1/2 tsp. double acting baking powder
2 tbsp. vanilla
1/2 tsp. salt
1 egg white, slightly beaten with 1 tbsp. of water

In a large bowl, mix, flour, sugar, shortening, 2 eggs, baking powder, vanilla and salt with a mixer at medium speed. Beat until well mixed. Shape dough into ball, wrap with waxed paper and refrigerate 2 to 3 hours.

Preheat oven to 400°F and lightly grease cookie sheets. Roll dough out to 1/4 inch thick and cut dough with floured cookie cutters. Place cookies 1/2-inch apart on cookie sheets. Brush tops of cookies with egg white mixture and bake for 8 minutes. Cool cookies on wire racks.
