FRIED GREEN TOMATOES 
2/3 c. all-purpose flour
2 tsp. salt
1/8 tsp. pepper
3 lbs. green tomatoes, cut into 1/2 in. slices
Salad oil

In pie plate, combine flour, salt, and pepper. Dip in tomato slices to coat both sides. In 12 inch skillet over medium heat, heat 1/4 cup hot salad oil. Fry slices, a few at a time, until golden on both sides and heated through. Drain on paper towels. Repeat, adding more oil as needed.
