VEAL PARMEGIAN 
4 breaded veal patties
1 pt. spaghetti sauce
4 eggs, sm. are best
4 oz. drained mushrooms
1/2 c. Parmesan cheese
3/4 lb. mozzarella cheese

Spoon 2 tablespoons sauce as a base for each pattie into a baking dish. Place patties and place about 1 ounce of mushrooms on top of the edges of each pattie. Break 1 egg over each pattie, breaking the yolk. Sprinkle liberally with Parmesan cheese. Spoon the remaining sauce over all. Add a layer of mozzarella cheese (grated or sliced) and bake at 350 degrees for 30-45 minutes.
